Default how to show and hide specific areas of the geometry

I am having hard time trying to retopologize a foot, since the toes are very close together, and the retopologized area is covering the inner area, so I am having hard time to figure out how to close lines.

Is there a way to select a group of polys on the mesh and hide them? in this way I can work without showing the reference mesh and close the lines.

Another interesting thing to have is the symmetry but on the opposite plane (e.g. X and -X), so if i am doing the top of the hand or foot, and use it; I can get the same points mirrored on the bottom of the hand or foot; saving a lot of headaches.
